My niece names the cattle and then seems to have no problem eating them.

Well, yes on the chicken and turkeys, though I have not often looked any of them in the eyes (I get largely ignored when the turkeys trundle through my yard, squawking away, so I can't get a good peer into their eyes), Yet, I have some guilt.
Fish - don't eat them , but only because I find them boring - taste-wise, that is.
Beef? I did have one miniscule piece (from my wife's restaurant leftovers of Sunday) of beef-tips (approx. 1 cu. in.) as part of my breakfast this morning, and found myself chewing for a few seconds until the flavor had departed, and expectorated the lump into a napkin.
