Looks like a good start! With all the room you got there I can see that turning into a hell of a railroad. Don't let a few grades stop you from expanding. As long as you don't feel you have to run "long" trains, some grades won't hurt you. They actually make it more interesting to me. That diesel you are looking at will probably not even notice the grades as long as you keep your trains down to 10 or 15 cars. The small (0-4-0's)steamers will pull 2 to 4 cars up a 4% with no problem, too. Lay out some track on the ground an try it.
I would have your mainline fairly level so you can just let'em run. Have some of your track with grades and use helpers, or double headers, to make it interesting. Alot of the layouts I've run across are setup with two loops. An inner and an outer, with cross overs between. I set mine up like that and have the main station in the area of the crossovers so a train running on either track can stop at the station, and you can run two trains on DC.
You'll want some stub sidings, and passing tracks, to allow some switching, and for car storage.
I don't know if you've run across them yet, but bird houses you get from places like Micheal's Craft stores are pretty close to scale for structures and are cheap($10 to $20 apiece.

Cappy, I called that fella in Nevada with the big G-scale store about some info on track and engine sounds, Sierra vs. Pheonix, and he was the most rude and disinterested hobby store owner I have ever had the displeasure of having to listen to. He actually topped the jack-ass o-gauge hobby shop owner from Massachussets. Their loss.
