Despite what most people have come to believe, Sushi doesn’t have to be fish. In Japan, you can find all sorts of raw meats served as sushi ranging from chicken to raw horse meat.

Do the purveyors of Sushi simply ignore the custom of cooking chicken, fish, pork, and certainly such animals as shrimp and lobster (and dog and bear ) to a "proper" temperature and cooking time? The term "trichinosis" (prevention: fully cooked meat) springs to mind. Am I old-fashioned in this regard? If so, I don't give a good puking.
