BTW, duck is real tasty. I would like to try goose someday but I doubt that I could find any down here. :(

First I ever had duck was with the SeaBees back in '71. I thought it was pretty tasty, all dark meat, although a bit fatty. Makes excellent gravy, though. Never had goose. (Never had lobster in the regular Navy. Two or three times with the SeaBees. We ate better as a Bee than a Fleet sailor).

I'm not a chef, and I'm also not a "connoiser" LOL. When I had duck a few times many years ago it was cooked by the same person. I can recall it being superb, and I can recall it tasting like mud. As I mentioned earlier, the same person cooked it, and they were a pretty darn good cook.

I think it's a lot more relevant what the critter was eating as to how it tastes. These were wild ducks and I'm guessing the ones in your restaurant were not, thus what the birds ate was controlled.

True. Diet does have some impact.

However, I lack a reference point for the taste of mud having avoided consuming it.
