Your list is awesome!
1/48 Revell Mack Mobile Gas Fruehauf tank truck. Still around cheaply as it was remade in the 1990's.

Atlantis Models has reissued this tank truck kit, but now it comes with Sinclair and US Army decals:
1:48 Vintage White-Fruehauf Gasoline Truck - Sinclair Dino Gasoline

Atlantis also reissued the 1955 Chevy Stake Truck that I think was also a Revell kit:
1:48 1955 Chevrolet 2 Ton Stake Truck

Atlantis also tooled new sprues of "glass" windows that the original Revell kits did not have. The reissued Stake truck comes with the window sprue, but I'm not sure about the tank truck - they tooled the windows for that kit after they reissued it. Atlantis sells these window sprues separately in case anyone still has unfinished Revell kits:
Clear Windshield Glass Set for the STAKE Truck
Clear Windshield Glass Set for the Vintage Gas Truck

They also have 8" Howitzer Gun and M4 Sherman Tank kits that might make good flatcar loads, although the Tamiya Sherman is probably better detailed than the Atlantis kit.
