Given the level of automation in prepared foods, I'd hazard that there are a very minimal number of real humans involved. Remember that the factory of today is manned by 1 human and 1 dog - the man is there to feed the dog; the dog is there to make sure that the man touched nothing.

As for what goes into sausage, that's very highly dependent on who is making what kind and from what kind of animal be it pork, beef, lamb, etc....and having been in attendance at butchering pigs at the family farm, I am very aware of what goes where....and that there is no waste.

I am also aware that some folks think that meat magically appears on Styrofoam wrapped in plastic and that no animals were ever involved.
